<p>La<strong> cocina tradicional oaxaqueña </strong>incluye el uso de ingredientes únicos y exquisitos de la región, como la <strong>hormiga chicatana</strong>, considerada como un manjar que, además de acompañar varios platillos típicos del estado con su delicioso sabor, aporta un valor nutricional importante, al ser alta en proteínas. &nbsp;</p>

<p>Estos <strong>insectos comestibles se recolectan de forma sustentable</strong>, solo durante una temporada al año, cuando se registran las primeras lluvias más intensas en los municipios oaxaqueños, principalmente de la región Costa. Los pobladores de las comunidades las recolectan cuidando su hábitat, sin embargo debido a su limitada disponibilidad y alta demanda, su costo puede rebasar los mil pesos por kilogramo.</p>

<h2>Preparación y usos</h2>

<p>Para poder consumirlas, primero se tienen que tostar en el comal con un poco de sal, con este procedimiento se les caen las alas y quedan listas para poder consumirlas como botana o en una gran variedad de platillos preparados con recetas ancestrales y otras más contemporáneas.</p>

<p>Su sabor es único, difícil de describir incluso para los que la consumen año con año, pero hay quienes señalan que es similar al de las almendras, avellanas o cacahuates. Lo único contundente es que las chicatanas ya no solo son un icono de la gastronomía oaxaqueña, sino del país.</p>

<p>Entre los platillos típicos de Oaxaca a los que se les puede integrar este insecto, se encuentra <strong>el mole</strong>: desde negro hasta coloradito, cada uno tan diferente como la sazón de quien lo prepara.</p>

<p>Los <strong>tamales oaxaqueños</strong> también son una excelente opción para probar estas hormigas y convertirlas en el ingrediente estrella de este platillo. Elaborados con masa de maíz y envueltos en hoja de plátano, se complementan perfectamente con la chicatana, ya sea que se agregan como relleno o incluso en la preparación de la salsa, dándole a un tamal clásico un toque distinto sin perder su esencia.</p>

<p>No podríamos dejar de lado las <strong>tlayudas</strong>, declaradas como Patrimonio Cultural Inmaterial por la UNESCO desde 2010. Esta tortilla de maíz de unos 30 centímetros de diámetro se sirve con quesillo, frijoles refritos, tasajo o cecina y col, y ¡qué mejor que coronarla con una deliciosa salsa preparada con chicatanas!</p>
